4-6 chicken breasts, boneless & skinless
½ tsp. ginger, ground
1 can frozen orange juice concentrate
1 can frozen orange juice concentrate
2 green onions
1 tsp. salt
1 tsp. salt
1 tsp. black pepper
1 can Mandarin Oranges
1 can Mandarin Oranges
shredded coconut (optional)
Cooked rice
Combine chicken, OJ concentrate, ginger, salt & pepper in a large Crockpot. Cook on low for 6 hours or high for 3 hours, stirring occasionally. Add oranges and green onions to Crockpot 15 minutes before serving. Serve over rice and garnish with coconut. Yields 4-5 servings
